Does tapping during prayer invalidate it, out of fear of passing wind that might necessitate re-ablution, given that this has become a pattern in most prayers?

The minimum required tranquility (ṭumaʾnīnah) in prayer is the slightest stillness of the limbs during standing, bowing, prostrating, and sitting between prostrations, or for the duration of reciting the obligatory remembrance (dhikr). If the worshipper recites the obligatory remembrances while standing, bowing, prostrating, sitting between prostrations, standing after bowing, and during the tashahhud (definition), then their prayer is valid. However, if they intentionally omit any of these, their prayer is invalid. If gas expulsion is continuous, such that the worshipper does not find enough time for purification and prayer, then their ruling is that of one afflicted with perpetual impurity (ṣāḥib al-salas): they perform ablution (wuḍūʾ) after the time for prayer begins and pray with that ablution whatever obligatory and supererogatory prayers they wish until that prayer time ends.
