It is permissible to sell olives when they begin to ripen, which is the time when becomes due. Zakat becomes due on them if they reach the (minimum threshold) of five awsuq (653 kg). The amount of zakat is one-tenth if irrigated by rainwater or similar means, and half of one-tenth if irrigated by machinery. The general principle is to give out zakat from the olives themselves, but it is permissible to give it out in cash if the olives are sold while still on their trees, or if doing so is more beneficial for the poor. It is permissible to stipulate that the buyer pay the zakat if the buyer is trustworthy, and in that case, you are exempt from paying it. Zakat is not due on the price of the olives unless a full year has passed on it and it has reached the nisab.
