What is the ruling on not recording the total amount of money, and what should be done about it, knowing that a will does not need to be written every night?

As long as you did not intend to mock the rulings of the Shari'ah, there is nothing upon you. A will is obligatory for anyone who has a right due from them that must be fulfilled, such as unsecured debts, or deposits, or obligations like zakat (definition), Hajj, expiation, and vows, so that they may bequeath their fulfillment.
