Is there a book that compiles the verses of questions and thanks in the Qur’an?

You can search for Quranic questions and verses containing expressions of gratitude in the indexed dictionaries of Quranic words and topics. By searching for the word "shukr" (gratitude) or "hamd" (praise), you will find words related to gratitude.

You can also search for interrogative words in the Quran by looking up interrogative particles.

Sheikh Abd al-Khaliq Azimah, in his book "Dirasat li-Usloob al-Quran al-Kareem" (Studies on the Style of the Noble Quran), extensively studied many interrogative words. Similarly, Ibn Hisham in "Al-Mughni," Al-Zarkashi in "Al-Burhan," and Al-Suyuti in "Al-Itqan" did the same.

Ibn al-Qayyim, in "Madarij al-Salikin," objectively studied the topic of gratitude, mentioning most of the related words found in the Quran.
