Is it permissible to rent a supermarket that contains a butcher shop selling pork, knowing that the renter will only collect rent from the butcher shop operator and will have no involvement in the sales?

It is not permissible for this person to act as an intermediary in the matter of this butcher shop that sells pork, whether in delivering rent or anything else; because that is assisting in sin, and Allah Almighty says: "And cooperate in righteousness and piety, but do not cooperate in sin and aggression." As for his purchase of the shop, it is permissible in principle, and there is no harm in it as long as it has no connection to the butcher shop.
