Is it permissible to pray Dhuhr five minutes before its time because work starts when the time for prayer begins?

It is not permissible to pray Dhuhr before its time begins (the sun's zenith). Whoever prays before then must repeat the prayer, because the obligatory prayer is tied to a specific time. Muslims have unanimously agreed that the beginning of Dhuhr's time is the sun's zenith. Therefore, praying before its time intentionally is disobedience to Allah and invalid. If it was unintentional, then the prayer is considered a voluntary (nafl) prayer, and he must repeat it. All prayers that were performed before their time must be repeated, and one must be diligent in performing them on time in the future. If there is an excuse that permits combining prayers, it is permissible to delay Dhuhr until the time of Asr. If it is impossible to perform the prayer on time without an excuse that permits combining, then one must seek another job that does not conflict with performing the prayer on time.
