Is it Sunnah to recite Surat Al-Ikhlas after reciting what is easy of the Quran in the Fajr prayer, following the example of the Companion who used to recite it? And is this limited to the Fajr prayer or does it include all other prayers?

Reciting Surat Al- along with what is easy from the Quran after Al-Fatiha is not a in Fajr prayer or any other prayer. Rather, what is established from the Prophet's guidance (peace be upon him) is that he used to suffice with one after Al-Fatiha, and this is the recommended practice.

Nevertheless, it is permissible to recite Surat Al-Ikhlas with another surah, and there is no harm in that, as some of the Imams of the Ansar did, and the Prophet (peace be upon him) approved them for it due to their love for it. The primary and preferred approach is to follow the Prophet's Sunnah and limit oneself to one surah after Al-Fatiha.

Combining two surahs in one rak'ah is permissible, but it does not indicate that this act is a Sunnah.
