Is it permissible to exceed the recommended number of tasbeehaat (utterances of "Subhan Allah"), such as exceeding one hundred tasbeehaat in the context of "whoever says one hundred tasbeehaat will have one thousand good deeds," and when is this permissible and when is it not?

There is no harm in exceeding the specified number in adhkar (remembrances of Allah). The Holy Quran and the Prophet's hadiths encourage abundant remembrance of Allah the Almighty without setting a limit. Hadiths indicate that whoever exceeds the allocated number in remembrance will receive a greater reward. The fundamental principle is that dhikr is prescribed in general, and increasing it does not cause harm, contrary to those who view an increase as disliked (makruh).
