How sound is the attribution of the aforementioned statement about Aristotle to the Prophet, peace and blessings be upon him: "Behold, Amr, indeed Aristotle is a prophet, but his people were ignorant of him"?

No mention of Aristotle has been found in the books of Sunnah attributed to the Prophet, peace be upon him. What is known among Islamic scholars is that he was considered a disbeliever. Ibn al-Qayyim stated that Aristotle was a polytheist who worshipped idols, and that all his discourse on divinity was erroneous. Muslims and various groups of philosophers rejected it. The reality of Aristotle's state was one of disbelief in Allah, His angels, His books, His messengers, and the Last Day, and his followers exalt him above the prophets.
