Is it permissible to work as a police officer in infidel countries to please one's parents?

Obedience to parents is not obligatory if they command one to work as a police officer in Western countries, as this work is forbidden. There is no obedience to a creature in disobedience to the Creator. Thus, obedience to parents is conditioned upon not disobeying Allah.
