Is it permissible to work in Western countries for fear of one's faith and out of concern for temptation in one's home country?

You must fulfill the condition agreed upon with the overseas educational institution, for the Prophet, peace and blessings be upon him, said: "Muslims are bound by their conditions, except for a condition that forbids what is lawful or permits what is unlawful." If you fear for your religion upon your return, inform the granting institution. They will either continue the scholarship or terminate it, and they have the right to demand reimbursement for what was spent on you. If your religion is threatened in your homeland, and staying abroad enables you to practice your religious rituals and invite others to Islam, then residing outside your homeland is better and safer, and perhaps even obligatory, for the safety of one's religion is among the foremost necessities. We advise you to fear Allah and beware of the temptations of non-Muslim lands. Righteous companionship and deep understanding of the religion will help you in this regard.
