How accurate is the story of Abu Dujanah rushing out of the Fajr prayer to return the dates to his Jewish neighbor, and the Jewish man embracing Islam after Abu Bakr bought the palm tree and gifted it to Abu Dujanah?

The story of Abu Dujanah and the palm tree is baseless, due to its weak narrative. Something similar was mentioned by Al-Safuri in "Nuzhat al-Majalis" without referencing its source. Al-Safuri is a litterateur who narrates many rejected tales and is not among the verified scholars.

Ahmad and Ibn Hibban narrated with an authentic chain from Anas that a man asked the Prophet, peace and blessings be upon him, to command a man to give him a palm tree so he could build a wall with it. The Prophet, peace and blessings be upon him, offered the owner of the palm tree a palm tree in Paradise, but he refused. So Abu al-Dahdah bought it with his orchard. The Prophet, peace and blessings be upon him, then said: "How many heavy clusters of dates Abu al-Dahdah has in Paradise!"
