Is it permissible for a wife to ask her husband for intercourse beyond his capacity, knowing his demanding work and that he has intercourse with her once a week?

Allah commanded conjugal relations with kindness. If a man is capable of intercourse and his wife desires it, he must fulfill her request to keep her chaste. Otherwise, it is not considered kindness to hurt or rebuke her, as this could damage the marital relationship. The obligatory right to intercourse is determined by the wife's need and the husband's capacity, as long as it does not exhaust his body or distract him from his livelihood.
