How can one dispose of money illegitimately acquired (embezzlement,invoice manipulation) from working in a tourist village that served alcohol, given the difficulty of contacting the relevant party and the desire to repent and start a new life?

You must return what was unlawfully taken from the funds of the entities you used to work with. If you do not know the exact amount, you must exercise caution to return what absolves you of liability. The funds can be returned through indirect methods. You have done well by repenting, so remain steadfast in that, for the Messenger of Allah, peace and blessings be upon him, said: "Whoever has wronged his brother concerning his honor or anything else, let him ask for his forgiveness today before there is no Dinar or Dirham, and before some of his good deeds are taken for his brother. If he has no good deeds, then some of his brother's evil deeds will be taken and thrown onto him."
