Is it permissible to sponsor a student of Islamic knowledge from Al-Azhar and dedicate the reward to a deceased father?

This sponsorship and other charitable donations can be dedicated, their reward (thawab) to the deceased father, and he will benefit from it. For charity (sadaqah) is among those acts upon which the scholars have unanimously agreed that its reward reaches the deceased.
