Resumption of marital relations during the waiting period (iddah) is permissible without witnesses, as witnessing is only a recommendation. As for apostasy from Islam, according to the majority of scholars, it is an annulment (faskh) and does not count as a divorce. So, if both spouses apostatize and then return to Islam during the iddah, their marriage remains valid. However, according to the Maliki school, it is a divorce and counts as one.
