Is Sheikh Ibn Uthaymeen’s description, may Allah have mercy on him, of those who adhere to the Sunnah of the single Adhan on Friday as “pedants” accurate, and which of the two is in accordance with the Sunnah: one Adhan or two?

The first Adhan on Friday is a good Sunnah established by Uthman (may Allah be pleased with him) when the population increased and people's homes became distant. The Companions approved it, making it a tacit consensus. It falls under the Sunnah of the Rightly Guided Caliphs, which the Prophet (peace be upon him) commanded us to follow. The basis for this is what Al-Bukhari and others narrated from As-Sa'ib ibn Yazid, that there was only one Adhan during the time of the Prophet (peace be upon him), Abu Bakr, and Umar. When the population increased during Uthman's caliphate, he ordered the third Adhan (which is now considered the first Adhan). So, whoever limits themselves to one Adhan is following the example of the Messenger of Allah (peace be upon him), Abu Bakr, and Umar, and whoever calls two Adhans is following the example of Uthman (may Allah be pleased with him).
