What is the ruling on a woman studying medicine and working with men and interacting with them, even if her intention is to help patients, given the existence of women-only clinics that she does not prefer?

There is no objection to a woman studying medicine and working in it, provided she adheres to the Sharia (definition) guidelines, due to its role in fulfilling a need of the Muslim community, especially in specialties related to women and childbirth. This is to avoid men uncovering the private parts of women. With good intentions, she will receive a great reward.

She must adhere to the Sharia dress code, not speak softly and alluringly, avoid seclusion [with men] and ostentatious display of her adornments, and work in an environment where she is not intermingling with men, as much as possible.
