Is it true that there is nothing in the books of Christians and Jews stating that they are the only ones who will enter Paradise?

Books of the Jews and Christians are not relied upon to prove or deny anything due to their distortion. The noble verse: "Say, 'If the home of the Hereafter with Allah is exclusively for you, to the exclusion of other people, then wish for death if you are truthful'" (Quran 2:94), is to be understood at its face value. Its interpretation is that Allah Almighty commanded the Jews to wish for death as a challenge to their claim that Paradise was exclusively theirs and that they were the children and beloved ones of Allah, but they did not do so.
