How do we reconcile God's raising of Jesus (peace be upon him) with His saying: "But when You did take me up, You were the Watcher over them"?

Verses (157-158) from Surat An-Nisa' mention that Allah denied the killing and crucifixion of Christ Jesus son of Mary, emphasizing that He was raised to Him. The Ummah has unanimously agreed that Allah raised Jesus alive, in both body and soul, to the heavens. As for His saying (إني متوفيك ورافعك إليّ - "Indeed, I will take you and raise you to Myself"), it does not mean death, but rather "taking possession," meaning taking possession of both the soul and the body and raising them. This is understood from the fact that "al-tawaffi" (توفي) does not necessarily mean death; it can also mean sleep, as in the verse from Surat Az-Zumar (الله يتوفى الأنفس حين موتها والتي لم تمت في منامها - "Allah takes the souls at the time of their death, and those that do not die [He takes] during their sleep"), which confirms that the verses are consistent in the meaning of Jesus being raised alive.
