Is working in hotels that serve alcohol and promote sin considered a sin for someone in dire need, who aims to provide for himself and his family, according to the principle, "But whoever is forced, neither desiring [it] nor transgressing [beyond necessity], there is no sin upon him"?

First, you must repent from your previous work in hotels that serve alcohol. If your current work is permissible, then continue in it and try to bring your family over. If you cannot, then be patient and strive to do what helps you maintain your chastity, such as fasting, lowering your gaze, and occupying your time with what is beneficial. If you cannot be patient and fear temptation, then return to your country and seek permissible work, for "whoever fears Allah – He will make for him a way out and will provide for him from where he does not expect." It is not permissible to take up unlawful work except out of necessity, which is assessed according to its extent.
