Is it permissible to attend and study a university course that includes graphology, the science of physiognomy, body language, the science of determining a person's character through the creation of their hand, and what resembles fortune-telling and soothsaying, knowing that it is not possible to drop this course?

There is a difference between graphology, body language, and physiognomy. Graphology does not fall outside the blameworthy fortune-telling in Islamic law, unlike body language and physiognomy, which are not considered fortune-telling, and there is no harm in learning them. If the questioner cannot abandon the study of graphology, then there is no harm in him continuing with it, provided he believes in its error and rejects its falsehoods.
