Is it true that Jesus, peace be upon him, was baptized with water by a religious man in the Jordan River, and why were the details of his life not mentioned in the Quran and Hadith to refute the fabrications of the Gospels?

We have not come across any report stating that Jesus (peace be upon him) was baptized with water in the Jordan River. The correct understanding is that he was saved from the treachery of the Jews, and Allah raised him to Himself after casting his likeness upon another person. Allah Almighty says: "And they did not kill him, nor did they crucify him; but it was made to appear to them so... Rather, Allah raised him to Himself." Scholars have differed on the manner of his ascension and the likeness that was cast. The Qur'an and Sunnah contain much information about Jesus, such as his birth, his speaking in the cradle, his curing the blind and the leper, and his bringing the dead to life, by the permission of Allah. The People of the Book altered their scriptures in rejection of the Qur'an, yet there remains in them that which affirms the truth of the message of Muhammad (peace be upon him). To debate the People of the Book, one must be fortified with correct doctrine and gather information to refute their arguments, otherwise it will be a trial.
