Is it permissible to cut parts from recitations of senior sheikhs, such as the listeners' saying, "Allah! May Allah bless you, our Sheikh," and is that considered a violation of copyright?

If you obtain recordings lawfully, and then wish to edit them by cutting out everything except the recitation, in order to listen to them yourself or to let others listen, there is no harm in that. This does not constitute an infringement on copyright.
